Strawberry Biscuits and lemon gravy
Biscuits
3 cups of self rising flour
1 stick of butter
1 cup of milk
2/3 cup of granulated sugar
1/2 cup of strawberry jelly or jam
1 teaspoon strawberry extract.
Mix the flour with the butter crumbling it through. Mix the sugar milk and extract together. Then add it to the flour and butter. Pull out the dough on a very floured surface. Fold the jam through it, then cut into biscuit rounds and put in a greased pan baking at 400 degrees.
lemon gravy (curd)
4 egg yolks
1 whole egg
1 teaspoon lemon extract
2/3 cup lemon juice
3/4 cup granulated sugar
1/8 cup water (only needed if you are using store bought not fresh squeezed lemon juice)
Mix the sugar lemon extract, juice, and water in a glass pan over medium high heat. In a glass or plastic bowl, whisk the eggs together. When the juice is just under boiling use it to temper the eggs pouring it in slowly, whisking fast. Then pour it all back in the pan on medium low, cooking until it thickens. Remove it from the heat, and add 4 tablespoons of butter one at a time mixing well.
